Paella is the most typical dish in Spain. There are historic written documents about it from century XVIII. Its origin came from La Albufera, a lake placed in coast of Valencia. That is a rice zone where today until exist many rice fields.
Comunidad Valenciana is a poor livestock area, by this reason animals availables to cook were rabbits, chicken and ducks. However this area is rich in vegetables like green beans, artichokes or tomatoes.
